Decided to make fried lice, as my father calls it, with veggies for dinner tonight. I used to make it with the package of frozen vegetables that have the carrots, peas and green beans in it (not the kind with lima beans, who likes lima beans anyways?) but didn’t have that and went with the fresh veggies that I had on hand. A trick with fried rice – always better to use day old or longer (not in my case). I used minute rice, not the best choice but it works because it is what I had. I want to try this recipe again with quinoa, since I have never cooked with it. First thing, cook veggies in the wok first and always separately from the rice. I also like my veggies done more than most, especially the onions! I used mushroom, onions, snap peas, asparagus, garlic and spinach (didn’t add the spinach until the very end, don’t want mush).
Once that is complete. Empty wok. Rinse pan. Set the pan to medium high heat and let it heat up. Make sure all the water is dry. Add some oil. Wait until the oil is hot. Add the day old rice. Stir the rice continuously until the rice is jumping out of the pan, literally. Move the rice to the outer edges of the wok and add a little bit of oil to the middle. Whip two eggs in a bowl and dump into middle of wok. Your wok should look something like this:
Continue to stir just the egg in the middle until it is mostly cooked. Mix the rice and egg together. Continue to cook until egg is fully cooked. Your wok should now look like this:
Add your pre-cooked veggies to the wok. I also added spinach at this point. You are almost done. Make sure everything is mixed together. Add soy sauce (or teriyaki if you are so inclined) to your liking. Remember, you arent going to be cooking for much longer (a minute or two more) as soy sauce has sugar and it will make your pan burn. Ta-da:
