		<description><![CDATA[Love it, Tanya. I still eat chicken and fish but haven&#039;t eaten or missed cow or pig in more than a decade. Eating mammals just doesn&#039;t feel right to me. Don&#039;t feel self conscious around your coworkers or anyone else ... the world is used to vegetarians by now, and it doesn&#039;t notice/care that much. :)  I bet your coworker with the beef lunch was just jealous of your yummy looking tofu!]]></description>

		<description><![CDATA[I wondered about this dilemma, too!  I have several friends who are vegetarians and they all cook meat for their families, but don&#039;t eat it.  Maybe Alan will get to where he does not need or want to eat meat at home and can eat out for lunch.

I found a really good recipe for a veggie dish.  It is Asparagus and Parmesan Tart.  I did not have most of the ingredients (ricotta, puff pastry, shallot) so I substituted Havarti cheese for ricotta, cheese focaccia for puff pastry and Vidalia onion (cooked!) for shallots.  It was delicious.  Vince loved it and ate two large pieces.  If you are interested in the recipe, I will send it to you.]]></description>

		<description><![CDATA[Alan, it is nice to see you post on the blog and see how you are dealing with having a vegetarian wife.  I would not be surprised if you start eating much less meat.  I made a vegetarian dinner last night and then Vince took it for lunch today.  It was delicious---but so much trouble to make!  It was pretty much a cooked cabbage casserole with lots of cheese sauce.  What made it really good though was there were two types of cabbage with the purple cabbage cooked in  balsamic vinegar and brown sugar and the green cabbage cooked in a rice vinegar and little brown sugar with olive oil.  That was layered with bread crumbs on bottom with parmesan cheese and then the cabbage mixed with the white cheese sauce and then a layer of green cabbage with this same cream cheese sauce mixed in.  Bread crumbs made from pita chips and parmesan cheese were sprinkled on top and then baked in the oven for 25 minutes.  Delicious.  Even Vince does not really like cabbage except cole slaw or stuffed cabbage and he loved it.  Sorry this is long.  I am eating about half vegetarian now and I like it!]]></description>

I know some people who do both and I would starve to death---probably.  And as for marinara sauce that you mentioned yesterday---if you can&#039;t make your own from fresh tomatoes, get Prego&#039;s organic tomato basil sauce.  It is the best!  I can&#039;t wait for our garden to come in this year.  Lots of good veggies--and all organic.]]></description>
